Clean Eating: Sweet Corn & Zucchini Fritters


Breakfast must be A) quick & B) Delicious, it's that first meal of the day after your big slumber so for me I need nourishment.

This fritters are so easy (as are all my recipes) and I recommend making some in advance to save you time in the morning. These also make a great easy, vegetarian dinner.


Ingredients:

Cup of sweet corn
2  large grated (and squeezed of excess water) zucchinis
1/2 cup wholegrain flour (or potato flour/almond meal for a gluten free option)
1 egg
1/2 cup water or milk
small handful chopped coriander
1 tsp sweet smoked paprika
Salt & pepper

Combine all ingredients together and put to one side while you heat a fry or griddle pan with olive oil. Make small mounds of batter and brown on each side. You can place in the oven to keep warm (low heat, 100 degrees celsius), while you prepare the salsa.

Serving options:

Poached egg on top with a sprinkle of dukkah 

Salsa: Dice 1/2 avocado & 1/4 tomato, drench with lots of fresh lime or lemon juice. Add a flourish of chilli oil & place a bed of raw rocket leaves nearby, this will up the veggie intake. Yum!

  1. Take out the flour and use almond flour and would be completely clean, Im so in love with almond flour right now and seems to be better for my stomach & digestion :) YUMMO!! Cant wait to try
